smitten kitchen's homesick texan carnitas

recipe can be found here.

I'm not actually sharing a recipe today (see link above for the recipe itself), as this is more of an adventures-in-cooking post.

served with avocado and cheddar cheese

You see, I recently got a new camera (that is, on Saturday).  As you can tell from the photos, I'm still learning to use it, but I really wanted to test it out, especially to see if I could post some photos here, and I didn't have much time this weekend.

If my extreme dependence on my weekly meal plans hadn't been first priority, I would have probably picked a tried-and-true recipe and posted about it, but unfortunately, I already had my Monday meal and the groceries to go along with it.  Over the past few months, I've been becoming increasingly dependent on making meal plans each week.

limes for lime juice
Over the past few months, I've become the meal planning queen: each week, I plan out dinner for each day and do all my grocery shopping at the beginning of the week.  It saves me from extreme hangry-ness at the end of the day (I become increasingly unpleasant when I am hungry), as I already have my meal ready to go.

add the cumin and kosher salt
Hence, these pork carnitas were made according to plan.

i always cheat and use the gilroy farms crushed garlic!
While I enjoyed them exceedingly (I was approximately starving by the time they were ready two hours later--make them on a weekend!), I would love to change them up by spicing them up with a little chili powder next time I make them.

orange juice!
(I would also like to give them a little more love next time so that the bottom ones don't leave a fine layer of charcoal on the bottom of my dutch oven while I'm on the phone for an extensive amount of time with my internet service provider.)

bubble bubble, toil and trouble
So, look out for an adapted version of this recipe one day soon, and look out for some more hopefully improving photos!

P.S.  I've been thinking about changing the format of the blog a bit so that each recipe includes a detailed list of ingredients (brands, etc.) in a grocery list format.  I was thinking this might make it more user-friendly.  Thoughts?
